Thanks for the replies.

I'm not a big fan of putting the extinguisher behind the seat -- seems it might be a little out of reach if you really needed it.  Also, it's kind of hidden away there.  I always thought a bright red or chrome extinguisher looked cool as well as served an important funtion. 

I run track days with the Porsche club, and they require it to be in plain sight and easy reach; bracketed as it sounds like the SCCA requires.  That's the look I am going for.

I've got some steel lying around in the basement, so I'm going to fabricate a bracket to fit where the seat rails attach to the seat.  This should move with the seat and keep the extinguisher in one location with repect to the seat. 

I'll post some pictures and you guys can let me know what you think.  Maybe it's unnecessary, but it's a good excuse to exercise my welding skills!  ;-)
