This was discussed at length before although I can't find the thread now. JH built quite a few 74's in 75. They registered the numbers and dated the cars as 74's with 74 build dates to avoid the new smog rules but didn't actually get around to building and delivering them until 75.
My car is a 74 that was built almost mid year 75 and shipped some time around August of 75.
Carroll Shelby did something similar with his initial continuation Cobras. He claimed to have "found" a bunch of frames in an old warehouse that were registered as 64's or 65's as I recall. He didn't actually assemble the cars until 30 or more years later but they still counted as 64's or 65's as far as the government was concerned. Purists have argued for years about whether or not they are "real" Cobras.
