 My head is similarly decked very close to the valve seats, and it would not be able to be decked again.

You going to clay the pistons to really see if it's kosher? Kind of a painstaking process but peace of mind.....

I'm pretty sure the original builder of my engine did some work to make the valves a little thinner, meaning removing material from the face of the valve. I have an old spare stock head and the valves are thicker.
